Managing Food Safety in Catering

The Level 4 Award in Food Safety is suitable for anyone responsible for managing food safety, particularly sous chefs, head chefs, managers, supervisors, chief stews, and is MCA approved. The course is regulated by Ofqual and accredited by Highfield Qualifications.

This food hygiene course is suitable for anyone who wants to be a food hygiene trainer, and anyone that is responsible for training their team in food hygiene practices.

It is run over five evenings on Zoom, with the exam completed three weeks later online.

Complete the course on Zoom and do the exam online with a remote invigilation app. Results are available within seven days.

Course Structure

A pre-course workbook is completed prior to the course on Zoom, and the course textbook, Richard Sprenger’s ‘Hygiene for Management’ book is sent to you in advance of the course. The live Zoom webinars covers the course syllabus, with chance to ask questions, look at sample exam questions, videos, and real-life case studies. All tutors are qualified environmental health practitioners with a background in the food industry.

The course is focused on the management of food safety and includes detailed sections on HACCP, food safety culture, microbiology and food poisoning, a managers’ role within a food business, food safety training and food poisoning investigations.

Useful Information

The course workbook and course PowerPoint slides are available to download from the online event page. The event page also contains some videos and instructions which explain how to set up for remote invigilation.

To complete the training remotely, each candidate needs; a pc or laptop with webcam, a smartphone, a reasonable internet connection and a quiet area to complete the exam online in exam conditions.
